Low-Sugar Bird's Nest for Mindful Sweetness

Ingredients
- · 1 pre-soaked dried bird's nest (about 5g dry weight)
- · 3 pitted red dates (natural sweetness)
- · 2 cups water
- · Optional: a few drops of monk fruit sweetener, to taste
Method
- 1Simmer the red dates in water for 15 minutes to release their natural sweetness.
- 2Add the soaked bird's nest and simmer gently for a further 15 minutes.
- 3Taste and adjust with a few drops of monk fruit sweetener if a touch more sweetness is desired.
- 4Serve warm, entirely sugar-free if preferred.
For anyone mindful of sugar intake, bird's nest is naturally very low in sugar on its own, it's the syrup that typically adds most of the sweetness. This version leans on naturally sweet ingredients like dates instead of added sugar, and can be made sugar-free entirely if preferred.
