Chrysanthemum Bird's Nest Tea-Soup

Ingredients
- · 1 pre-soaked dried bird's nest (about 5g dry weight)
- · 1 tbsp dried chrysanthemum flowers
- · 2 cups water
- · Honey or rock sugar to taste, a few wolfberries (goji) for garnish (optional)
Method
- 1Steep the chrysanthemum flowers in hot water for 5 minutes, then strain to remove the flowers.
- 2Simmer the chrysanthemum-infused water with the soaked bird's nest for 15 minutes on low heat.
- 3Stir in honey or rock sugar to taste once slightly cooled.
- 4Garnish with a few wolfberries and serve warm.
Dried chrysanthemum flowers bring a subtle floral note and are traditionally paired with lighter, delicate dishes. This version is intentionally light on sweetness, letting the floral fragrance come through.
